Additionally, barley contains a relatively high amount of 'beta-glucan,' a soluble fiber that has a positive effect on cholesterol levels. It is also found, for example, in oatmeal. The taste of barley is described as slightly sweet. Here are some ways to try these grains: Pearl barley: these are hulled and polished barley grains that can be used like rice. They can also be used to make risotto and can be added to soups. Barley flakes: they can be added to morning muesli. Barley flour: ground barley can be used to bake bread. Mixing barley with wheat flour, for example, is essential, otherwise the bread will not rise. The proteins present in barley cannot form gluten.
