Quinoa is a highly beneficial health food. These seeds are rich in protein and also contain calcium, magnesium, and vitamin B9 (folate) in higher concentrations than wheat. For people with diabetes, quinoa is particularly beneficial because its carbohydrates raise blood sugar levels slowly. Additionally, quinoa is suitable for individuals with celiac disease as it is gluten-free. The dietary fiber in quinoa helps bind cholesterol in the intestines, while potassium and magnesium support blood vessel function, protecting the heart and cardiovascular system. It should be noted, however, that the seed husk contains saponin, which can irritate the intestinal lining at high concentrations. Therefore, the seeds are peeled before being sold, and any remaining saponin is removed through thorough washing and cooking.
